Forgot to update here for the sake of data points if nothing else. SAS has finally coughed up $$$ for everything they were supposed to after the fiasco we went through. We filed our claim the day after we got home late July.
November 15 we got a direct deposit for our 4+ hour (3+ days in this case...) delay according to EU261/2004. They were obviously rushing, since they didn't pay attention to the receipts attached to the claim, so had to get them to pay for accommodation and meals, got that on November 16. By mid-October we had already left a claim with Danish Trafikstyrelsen anyway. I had to point out that we were still not receiving the downgrade compensation, and that I was willing to go to small claims for that. Surprisingly, a month later I got a reply in Swedish--meaning the outsourced (Indian?) case workers must have elevated the case. December 9, we got the 75% of our return leg fare back because of the Prem Eco to Eco downgrade.
Phew.
