I cannot speak to menu's in advance but the one thing that struck me on my recent flights US>AUH>SYD was there was only one scheduled meal service for a 12+ hour flights which I found surprising. There was an "all day" option but you had to specifically request it so be aware if this is common practice.
There is no scheduled service. It's all dine on demand. The menu items do run out towards the end of flight - so they try and take down your first meal preference - you can choose to have it later
