On another crappy note, twice in the last two weeks they've changed my ATL-PTY-SCL ticket, first making it a 3 minutes earlier departure and then making it 3 minutes (so back to the original time) later.

I called the number to verify the changes as something so simple couldn't just be acknowledged in the app. Totally blanked and was calling a non-800 number.

AT&T just texted me telling me how I could reduce my $100 International calls to Panama .

I've searched and couldn't find an 800 number from the US. If this happens again can I just blow-off calling them to confirm or will that affect the ticket if I don't, and/or is there a way on the website/app to accept the changes?

Also you can call through web call ( freee) https://www.copaair.com/en/web/us/reservation-center . They have some problem, because in long call the webpage refresh with a new call. For use that need time but working for me in some contry where donīt have access to real call or is too expensive try call to Panama number.
