Currently it is still just the bev/nuts, then full meal on tray, then choice of desert (usually ice cream or a cake/tart). My recent international D1 flights have had the service be very/overly rushed. On CDG-BOS last week they did the beverage/nuts and immediately came with the meal so quickly that pax didn't even get more than a sip of their drink. Same with desert, it all was very hurried.
Food quality was quite good - had a delicious cod fish meal and nice wine - but was pretty surprised at the relatively low level of service and poor pace. It felt like I was on an overnight flight to EU with the dine & rest option.
The proper D1 service procedure for day flights (from Europe) and eastbound flights before 9pm (I believe) is to serve them in separate courses:
1. Beverages and amuse-bouche
2. Tray with soup, salad, and bread
3. Main course
4. Dessert choices from tray
Unfortunately, some pursers have taken it upon themselves to deviate from the procedure and combine #s 2 and 3. Do write to Delta and express your dissatisfaction with the execution of the service when you encounter this.
