that’s the most silly thing I have heard so far, some how European carriers have convinced you that paying an economy seat with an empty seat next to yours it’s ok for business class

What everyone is willing to pay is up to them to justify and value. You, nor myself, are going to dictate what other people pay or how they value services and goods.
Europe is much ahead in regards to material wellbeing. We don't need a flat bed for 2 hour flight if that's what you value the most - sometimes a 40
€/30€/20€/10€ flight is just fine.
At the end of the day, you say you "fly them when the time and price is right", why you don't just do that then? A rhetoric question.
