Professional cooking is competitive, and there is a tendency to look for combinations that will be novel and surprising, but it seems to me that someone at HQ is taste-impaired (has no idea how certain things would taste together), or is getting paid to choose eleven weird things for every menu. There are famous restaurants that specialize in seemingly incongruous combinations, but their chefs aren't so clueless.
