This!!! A lot of customers are under the mistaken impression that if they have a special meal listed on their Aeroplan profile, that it will automatically feed through to their reservation.
While this should be the case, it is not. The special listed on your profile is just a ‘preference’ and not a request.
You have to specifically choose it during the booking process or call AC reservations to have it put in at least 24 hours before your flight, or the odds of your special meal showing up is 0%.

Just being on an Aeroplan profile doesn't mean it is or was ever on your ticket. It may suggest that during the booking flow, but you should be able to check the reservation via your original email or your eupgrade email, to see if it is on there.
I haven't seen or heard issues with SPML and eups in particular... Except if the eup request doesn't clear until at the gate, be prepared to eat the lower cost (to AC) economy class special meal.
