The short answer is no. Caviar is not served on the shorter sectors. I cannot remember what the exact cutoff is (some of the experts here might know), but for reference on certain routes around the 4 hours length, it is not present. You can check the menu for your route on Emirates' website.
On a related topic, I have been served caviar that was definitely past its prime on a couple of recent sectors over the past two weeks. I suspect it might be a refrigeration issue... Caviar is so, SO prone to going off if not constantly refrigerated, that I've always wondered whether the cold chain can really be maintained when catering a plane. Interestingly it's an issue that I had never experienced before on EK.
Would not be going to well if people start to get food poisoning for Caviar not stored properly.
Caviar is served on non breakfast flights as of approx 4.5-5 hours of flight duration. If I am not wrong, the shortest flight you will find it on is IST however don't take it as benchmark as some flights a bit longer are not getting it. Looks like EK wants to offer it's full premium service on this flight to set a benchmark against TK.
