To late to help you now, but Norwegian has a AMS-CPH flight scheduled for 10.20, which is running only slightly late. They have another flight scheduled for 7.30 p.m., though. Could be an option to get you to Denmark if SK also screws up (they canceled yesterday's departure).

As for your bags, you are at the airline's and airport's mercy, as you have found out. It is of course perfectly possible to retrieve you luggage and return it to you, they have just decided not to do so for any number of reasons.
