I rarely rent cars, but trying to travel more this year so I'm looking for some input.
I booked a car from Hertz through Autoslash/Priceline before I had my flights booked. Flight times have changed so I will be arriving to the airport ~4hrs after my reservation (reserved for 1PM, arriving at 5PM), and flying out ~4hrs after my reservation (reserved for 7AM, flying out ~11AM). So I guess the return will only be about 2hrs later, since airport time needs to be factored in.
Will this time difference cause any issues? Unfortunately I cannot cancel and re-book as the price is nearly double now. Any chance I can adjust my times after I've already made the reservation?

No need to change anything (most likely). If you're booked with one of the major companies and renting in the US or Canada, then your reservation will be held for
at least 6 hours past the scheduled pickup time, and often until the close of business, or sometimes even for a full 24 hours depending on the circumstances. The rental companies understand that flights get delayed, canceled, etc. and they have very liberal policies to deal with this, so no need to worry.
