Check the fare rules. In general, fully refundable domestic tickets can be refunded even after departure, but for safety I'd recommend canceling and refunding them at least 30 minutes prior to departure.

If I need to cancel less than 31 days in advance (and don't want to pay the fee), could I change to something like ORD-CDG-LIS on United/TAP? The cost in miles is just 2,000 more for this segment. Or would I need to find the exact route (ORD-ZRH-LIS)?
You can change to any route, including, e.g., ORD-STL or ORD-DTW. If the new ticket uses fewer miles, those will be refunded when you make the change, and then the rest will be refunded when you cancel and refund the new ticket.

Or any other way of getting around the fee?
It's unlikely that they'll waive the re-deposit fee, although it's not impossible. However, the workaround is to change, for free, to some other flight that's more than 31 days distant, and then refund the new ticket.
