This is more about leaving France, but If anyone wants to avoid showing their vax and COVID test status at the gate when flying CDG-USA, or even showing their passport, I found that when the staff that does all the checks feels like they have worked enough, they just walk away. I was one of the last to board right before the AF deadheads, and the staff had all disappeared. So all I did was scan my BP at the automated gate and stroll onto the plane.
