All Mexico departing flights used to be catered locally, even DFW-CUN-DFW-CUN same day turns were catered in Cancun. Eventually that lead to some very substandard meals being served and at one point “rice stew” was loaded, which was simply buttered water with maybe a thimble of rice floating on top. Upside was delicious locally made flan was guaranteed to be desert.

Lima is akin to a domestic “Exception Market” like RDU-ORD or LGA-ATL. They’re considered competitive business critical markets and receive meals in First class as a differentiator while other markets of similar size and distance do not. Back in the day when LATAM and AA were best friends AA needed to offer a similar level of service, since the two no longer speak, for competitive reasons that level of service remains.
Semi unrelated but AAdvantage is the second largest, if not largest, frequent flyer program in Latin America and intends to maintain that status without LATAM. Hence the equity stake in Chile’s JetSMART and cobranded credit cards being offered via SANTANDER in smaller countries like Uruguay.
