I did this in summer 2020 when the vaccine was not even available. I flew to a country that required self isolation for 14 days. Booked a 5-week stay, isolated for the first 2. Then enjoyed the sweet freedom for the last 3 weeks. The isolation time was just part of the cost of that vacation.
