As long as the wine is dry and isn't oxidised it should be fine. Any beer will do, but I tend to use a lighter beer like a lager etc. You probably want to avoid stouts and porters. Don't forget the whiskey or brandy.
BTW, that recipe for peri peri in the link is outstanding.
