I had Turkey breakfast sausage but thought that might be risky. I went with extra garlic and added paprika. I’d have enjoyed the diced chiles (as would FIL) but I keep the heat low for Mrs BV’s sake.

Ready for the oven. I didn’t take a picture after they came out if the oven. Other than the butter melting and the bread crumbs browning, they didn’t look any different. FIL liked them but said his mother made the best stuffed peppers ever. I can’t compete with an 80 year old memory.
