ever since braslvr taught me about cooking chicken thighs at LOW on the grill, I’ve pondered the idea of Low for meat. I always only cook steak at High.
I use grill mats that I bought on Amazon. Just for seafood and vegetables. So I don’t worry about sticking or falling through the grates. I’m not sure what they’re made of but I’m too old to worry about carcinogens. They last through 5-10 uses and cost around $9 for 6.

The asparagus, sprayed with olive oil, pepper and salt, came off after about 4 minutes a side. The thermometer said the grill was 400, but the asparagus side was turned lower than the flank steak side. Medium low for the veg, medium setting for the steak.

I’ve never made stuffed peppers but my FIL says they’re his favorite so I’m attempting them tonight. I’m using the Joy of Cooking recipe - it’s pretty basic. I don’t anticipate any trouble with this but it’s looks pretty bland. Any suggestions on tarting them up?
