Lockdown lunch...
15 hour brined chicken, butterflied and cooked over coals. Served with my peri peri sauce, a simple salad and crusty bread.
I brined the chicken in beer, brandy, white wine, garlic and bay leaves.
I can hear the crunch of the baguette, music to my ears.
