Caesar salad does not normally have dairy. Aged pecorino romano is sheep's milk cheese which doesn't have the same lactose. Also goat cheese and other aged (Parmesan) cheese are ok with lactose intolerant. Dressing is standard---lemon juice, garlic, anchovy, dijon, egg yolk, worcestershire, oil. Instead of croutons (no gluten) I used Whisps Parmesan Crisps and I liked them as much as croutons. https://whisps.com/products/parmesan-cheese-crisps

ooh I picture goat / sheep cheese to have lactose. Great to know they’re excluded. And I assumed any aged cheese have lactose. Good lessons for lactose sensitive folk.
I know who loves artisan romaine and who got some at sco at Costco! :-)
