The frozen enchiladas look good! I know that restaurants smother enchiladas with sauce - my favorite taqueria has a similar burrito and I forgot the name for it. It’s possible that my spouse doesn’t like too much sauce. I have been to Trader Joe’s when the enchiladas are sold out so someone buys them. I just eat them because my spouse likes them.
I would try those frozen ones...or you can each get separate enchiladas!
Yes, obviously someone buys them but they don't fit my definition of enchiladas and it is easy to buy or make ones that do.
