Thanks for all the suggestions so far!

Ooh, sounds awesome. Now I need to find this version of köfte or else make it myself. Shame I didn't know about it when we still had a ton of shiso growing in the garden.

I do, but have had problems convincing her to branch out into lamb. It's more the "cute animal" issue for her than the taste. Personally, there are a ton of lamb dishes I love which I'd love to share with her, but getting her to follow doctor's advice for red meat by adding beef has been a big step!

How about oxtail stew ?
Does veal count ?
Like vitello alla milanese
Possibly substituting some with lamb / mutton if she cannot manage with so much beef ?
Veal sadly out. She explicitly ruled it out.

Oooooh.... we do have a few local Korean BBQ places on the list which came highly recommended. Haven't seen something like this on their menus yet, but will check a few others. Looks amazing.

Not literally hide it, but make it so the dish isn't about beef. Such as the Bolognese or goulash as some people suggested. Maybe chili? Even better, make a thick homemade chili and serve it over all beef hot dogs?

How about a Reuben (corned beef or pastrami)? Even just hiding it in tacos with lots of good veggie toppings.
So far, she hasn't. She had pho two days in a row (one homemade, one from a carry-out). And she offered to have it again. Then the next day asked for NY strip again.
I think chili is on the menu for sure, particularly next stretch of really nasty weather.
