I would think anyone would get sick of beef, even if you have a different cut every day. Perhaps another way to look at it is how to "hide" the beef in other dishes. Not literally hide it, but make it so the dish isn't about beef. Such as the Bolognese or goulash as some people suggested. Maybe chili? Even better, make a thick homemade chili and serve it over all beef hot dogs?

How about a Reuben (corned beef or pastrami)? Even just hiding it in tacos with lots of good veggie toppings.
