Making a roast beef is fairly simple, as long as you have a good meat thermometer. You can Google just about any recipe, but the NYT has a fairly easy one. The REAL problem with roast beef is getting those thin slices that are so perfect for a sandwich. If you're not going to spring for a meat slicer (good ones are pricey), I'd say just continue buying sliced roast beef from the deli. I've thought about buying a slicer a few times, but just don't think it's worth the money for the number of times we'd use it.
