Unfortunately I burned up pretty much all my DeflateGate eCoupons in 2019 and earlier in 2020. If I still had a bunch, I'd happily do a test run of this to see how it worked out.
Not the fully the same scenario but I cancelled a Latitude ticket outside of the 24 hour window a few months ago where the payment included an eCoupon. The money, including the value of the eCoupon was refunded within 48 hours according to my Amex statement.
