Both xxx-IAH & IAH-EZE on 1 ticket? Or 2 separate tickets?
If 1 ticket its more of a problem for the airline.
What airline/airlines? Both UA?
Will you have checked baggage?
USA does not have exit immigration procedures
UA at IAH will check you have the require documentation for entry to Argentina. With Covid-19 that may take more time than a year ago.

Personally would take 3 hours, even if all on 1 ticket. 60 minutes does not allow any margin for delays. If 2 separate tickets would never consider 60 minutes.
