It's normal that they are not sending any confirmation e-mail when you hold on to your ticket and convert it to an open ticket with new flights.
When rebooking your ticket, you would use the same 6 digit booking confirmation number and it would appear on the QR website and the app when you've actually used that open ticket and segments are loaded.

I guess that Sam Lewis has thought that you've cancelled the flight on your own as QR operates flights to SYD at the moment and they do not honor involuntary changes due to border closures 2.5 months before the flight.

Your situation was because of a flight cancellation so you wouldn't need to pay any fare difference when you rebook and use your ticket on hold.
