I'm not aware of anything in the T&Cs specifying that all nights from a single stay overlapping NYE apply to the following year, but feel free to point it out if it is in there.

I have seen a lot of FT data points confirming how Hyatt's IT actually works and people taking the view that Hyatt probably haven't revamped their IT for this promo.
