(My basil and mint have turned into bushes, so a recipe that calls for a couple cups of herbs makes me happy.) You can find the recipe in the NYTs or in the cookbook Ina Garten released a couple years ago. Versions of it appear elsewhere online, but take my recommendation and use basil-mint-arugula. Some recipes suggest parsley.
That is a good recipe .
another favorite herb combo of mine is Basil/mint/cilantro. Lucky you...i don't have bushes of anything growing ...i need to buy some basil to make pesto to freeze .
at a friends house last night i had a delicious pea pesto...frozen peas, Parmesan, garlic and olive oil...it was bright green and made a great dip but she puts it on chicken too.
