Update - I think you're working too hard. All you need is an email client that allows you to store all emails locally.
The issue is that I have multiple computers & tablets, so I need some sort of online access.

You know what? That actually came up on my search. I discounted it because it said "multiple mail accounts from Apple Mail or Postbox". I assumed (wrongly) that only Apple Mail or Postbox were supported.I should have read the details more closely.
