Yeah, I guess that is true, though it's also weird since the card has nothing to do with it -- it appears the offer is attached to my Platinum card, but I also have other MR-earning cards. But, I am not planning to cancel any Amex cards in the near future so I'm also not worried about it.

If you're not comfortable with AmEx, they've got plenty competition for you to choose from. Just wait for the right bonus. IME none of the other banks ever clawed back bonuses, or have minimum balances. If you have any doubts, move your savings to a better bank.
Many banks have language reserving the right to claw back SUBs and other similar actions, but Amex has uniquely acted on this language in the form of
preventing you from earning future credit card SUBs. So the threat has teeth and frankly getting on a blacklist where I'm no longer eligible for Amex SUBs (many of which are worth more than 25K MR points) is to me a worse outcome than any situation where any of these banks might claw back the SUB associated with the savings account itself.
