Weather is always an issue of course but Smithers is much better than Castlegar in that regard. In truth when it comes to weather, I have had the most delays connecting via SFO but much of my travel is up and down the left coast. I find SJC much more reliable when SJ/SF is my destination or origin. Cow could certainly chime in. SFO is the nicer airport though, and for sure I wouldn't want to spend a day stranded in YYD.
I think I've connected through SFO once. I've arrived late, and I've missed connections when departing, but having chatted with some of the SFO (not AC) team, they actually put in a LOT of effort into trying to be positive to the network on good days, meaning an average early departure. Because they know when Karl rolls in, they'll be worst in the network.

I have no expertise in the field, but find that blue cheeses and peaty scotch sensitivities tend to run together. Regardless, I am jealous looking at those repasts and would gladly enjoy the experience again. I do really enjoy a true charcuterie and cheese sampling menu and the last similar to yours would have been at the Del in San Diego a few years ago.
I would hope most cities have some kind of wine bar that can prepare these things without you having to travel to SAN for it. Find one now. Don't wait years.
