It's in an area marked "keep clear" (I assume of any vehicles or anything that could inhibit said "open ventilation").
It has what, a 5 gallon propane tank ? A size deemed acceptable for home use.
It's located how far from aircraft fueling pits/areas ? A distance that surely exceeds the dimensions of my backyard.
To the OP,
I'm DL Plat and PHX based, but it's been a month & half since I've been thru that terminal. So I'm clueless as to what outlets might still be open in the terminal, but I'd bet it's limited.
So I'm guessing this grill is for some "social distancing" (only the "DL PHX family" BBQ while at work) .... vs eating upstairs with the few passengers who have been in contact with how many folks while traveling.

Continental had something similar. I had a meal from it at one of the CO sponsored DO's.
OMG, it was inside a CO hangar at IAH. With at least a 737 & 757 inside the same hangar !! I'm soooo lucky to still be alive today
