I mean, AC basically uses the wide bodies in that scenario. AA only deploys that A321T on premium routes like NYC to LAX, which is not really any different than UA using the 787 or DL using the 757 with lie flat J seats on the same route, or Air Canada using the 767/777/787 on YYZ-YVR/SFO/LAX.

YHZ-LHR is kind of a travesty but it doesn't sound like there's any plans to put B/E Diamond or VantageSolo seats on the 737.
