Buy the leanest, non marbled sirlon you can find (this is key, some might accidentally buy a tender cut and ruin your chances before you start. Avoid meat labeled 'Prime' (may work good for Amazon but not when it comes to meat).
Buy a spare propane cylinder! Whether it's cooking meat or making fountain Coke Zero with CO2, a single 20# cylinder is never enough!
Sear quickly at high heat on grill , move to indirect heat.
Take temperature every 5-10min for about 30min (note: if Temp isn't increasing from 98F 36.7C , the good news is you don't have Covid-19 yet. The bad news is you need to take the STEAK's temp, not your own).
When it hits 160F give it another 10 minutes for good measure.
