This prompted me to search on United's site but I'm not finding any ANA operated flights.

A few questions
  1. Am I doing it wrong? I'm completely open to that.
  2. Is the above expected behavior?
  3. Is there a better alternative for finding ANA availability?
ANA website (AMC program) requires return or open jaw tickets.
also, there are many AMC rules outlined on the website (zones etc). just search for an itinerary that follows all the rules and you will get a result (of course, if there is availability).
what dates and route are you looking at?
