Now things get interesting...Multiple islands in Maldives "locked down" due to the virus. We are scheduled to leave a week from Monday with a layover on the way and arriving next Friday.

My stay is in 3 weeks time, we are all going to have to wait and see.
Mentally I have accepted that the trip is likely to be cancelled, probably from the Maldives imposing further entry restrictions as the virus continues to rapidly grow in Europe and North America.
If you get there before any such restriction is imposed you should be ok, subject to the resort not getting an active infection.
