I know that I can change my AAdvantage award flight with no fee as long as the origin and destination are the same. How long before my flight can I call to make this change? 24 Hours, 48 Hours, 7 days etc? I am trying to find out how last minute I can wait to decide if I want to postpone my trip to Japan or not.

Anytime before the scheduled departure time.
And you don't necessarily have to change the date right then and there. You can always just cancel your award (no fee, and you can do this online at aa.com) then call AA at a later date when you are ready to rebook it. There's no fee as long as you rebook the same award type, same O&D, etc.
Just keep in mind all travel must be completed within a year of the original ticketing date.
