LATAM is the only AS partner that goes to Tahiti and there is no award chart for that. I'm assuming you meant Nadi, Fiji?
Qantas you can do stop-over in SYD
Emirates you can do stop-over in Dubai.
Cathay Pacific you can stop-over in Hong on the way to SYD.
Many routes will not have first class.

Qantas (also known as Air Sydney) has international gateways at BNE & MEL.

CX flys HKG to AKL & CHC(seasonably). Will not be able to get as AS award on CX HKG-SYD-NZ

FJ can have reasonable award availability at times. Flys to/from several USA & NZ airports. Not just LAX-AKL.

An reward to Australia and then separate cash tickets to NZ is another option (many airports possible).
