We have interest in being in New Zealand and any of the stopover places as well as Japan and other destinations are interesting too.

Stop-over spot is typically the partners hub or at the INTL gateway.
LATAM is the only AS partner that goes to Tahiti and there is no award chart for that. I'm assuming you meant Nadi, Fiji?
Qantas you can do stop-over in SYD
Emirates you can do stop-over in Dubai.
Cathay Pacific you can stop-over in Hong on the way to SYD.
Many routes will not have first class.
Qantas
(also known as Air Sydney) has international gateways at BNE & MEL.
CX flys HKG to AKL & CHC(seasonably). Will not be able to get as AS award on CX HKG-SYD-NZ
FJ can have reasonable award availability at times. Flys to/from several USA & NZ airports. Not just LAX-AKL.
An reward to Australia and then separate cash tickets to NZ is another option (many airports possible).
