One option for the Belize return leg would be to fly from Chetumal to Mexico City and then MEX-LHR. The CTM-MEX route is operated by both Volaris and Interjet but of course can't be booked on one PNR so an overnight in MEX probably advisable. Chetumal is literally a short taxi ride across the border from Northern Belize or there's an ADO bus.
Thanks - unfortunately coming back from MEX to LON is even more expensive than BZE/CUN, and that's before even taking into account the cost of getting to MEX from Belize! But agreed it's very easy, we've done the Corozal-Chetumal run before
