I’ve said this before, but if you are a fussy eater or have food allergies or whatever then airplane food is a difficult proposition. I’m married to someone like this and we always make sure we have food for her before we get on the plane. Your flight is fairly short too, so not like you’re lugging a grocery cart on to the plane.
I know you probably feel like you paid for the meal with your J seat but I’d suggest that spending $20 or $30 for something you’d actually enjoy and bringing it on-board and then just having a drink in J would cause you a lot less stress. You can even have part of your J meal (the salad, bread whatever) and compliment it with what you brought on board.
Food on AC is a lowest common denominator kind of thing. And usually not as good as what you can get even in an airport restaurant. The challenges of aircraft catering as ACYYZ/SD points out above means there is no silver bullet here unless AC wants to spend a lot of money and throw away a lot of food over catering.
Personally I eat just about anything. As an SE when I am in J or PY and they forget to ask me first I really don’t care. But I realize not everyone is in the same boat
