You can get started with Ubigi eSIM here: https://cellulardata.ubigi.com/esim-ios/

Their plans are just for data. They don't offer voice service. If you want to make wifi calls with your Verizon number, then just leave your phone in airplane mode and connect to wifi when you want to.

Alternatively, you can sign up for a T-Mobile US eSIM account which might allow for their free roaming (I'm not sure).
