I asked them once casually and was told that technical stops don't count. Just like an emergency diversion to XYZ wouldn't count as an extra segment. I was shown some T&C where it was said that mileage calculation doesn't need to follow great circle mapping and CX at their sole discretion will determine mileage credited regardless of actual miles flown.
Many other programs have similar verbiage in the fine print. Bottom line you probably wont succeed in getting credit for an extra segment if it was a technical stop not reflected in your boarding passes.
I've done HKG-YVR-JFK and got miles for both segments, but I chose my flights so as to have different flight numbers. If both flights have the same number, it will post at HKG-JFK.
