Until about a year ago, it was quite common to get cava or prosecco when you ordered champagne. Since then a memorandum must have gone out because almost all flight attendants are quite good now about not calling non-champagne sparkling wine "champagne." The same for serving sparkling wine when a customer ordered champagne. Previously, you almost always had to ask to see the bottle. I've still had two flights in which the good stuff was hidden and not chilled.
