Cheese curds in Canada are made from pasteurized milk. There is no market for unpasteurized cheese curds, let alone unpasteurized cheese products outside of the self professed experts who are content to be exposed to deadly pathogens. Cheese derived from unpasteurized milk is subject to the 60 day rule which sets it apart from raw milk cheese products found elsewhere.
You can be assured that pasteurized cheese curds will be sourced from a specialty dairy, even if they have to go to Vermont where it is available. VT Farmstead Cheese Curds ? Vermont Cheese Council The Vermont cheese council promotes its curds for poutine.
