I'm writing a very basic airline simulation game, fuel cost / fuel burn rates impact this a lot. So not used for anything close to operating performance but just a way of getting a number which is somewhat realistic for an artificial world
For many aircraft you may also be able to reasonably locate a chart/data with fuel burn for climb as well as average taxi fuel burn rate. Combined with basic cruise burn data (adjusting for decreased weight over time as mentioned) that's probably close enough for the purpose you've described.
