Alle Testiere would be my choice. All three are outstanding restaurants and all three offer quintessential Venetian Cuisine,. In looking at the location of your hotel, it appears that Alle Testiere would be the most convenient. Antiche Carampane is the more casual of the 3. Al Covo is the least casual. You can't go wrong with either of the three you are considering.
