I would just say, as well, that the cut-off time for baggage is now T-60 for T5 flights that are long-haul, compared to T-45 minutes a few months ago! So the situation has rather changed. So that gives the OP 30 minutes (assuming an on-time arrival) to check in his baggage for his/her ORD flight. Doable most certainly, but not too much room for error.
Under these circumstances, I really would consider taking my luggage with me to DUB and eliminate any hassle on the connection through T5 if possible. OP how are you getting to DUB the day before?
