The poster above is correct, let me just make this clear for you based on what I think your meaning is:
NO.
You cannot do this, unless you're okay with the HKG-SUB sector cancelling. (Put another way, you are PERMITTED do it, it's not like you'll be charged extra or the police will come after you....but your HKG-SUB sector will be invalidated.)
Whether you inform Cathay or not is irrelevant. If you skip a sector in the itinerary, the rest is cancelled.
