Does it also hold the actual fare that the website quotes? Or when I come back in 24-72 hours and, for example, the I class fare has run out of seats, will my booking still be there only at a more expensive fare?

When "Hold Your Fare" is selected, the flight fare will be fixed for the Holding Period, however, taxes, fees, and carrier surcharges are subject to change.
It's called "Hold Your
Fare" for a reason.
Sidenote: just tried to make a dummy booking with GR status for a Q fare, noticed that seat is no longer pre-assigned when on hold. Tried holding Q-fare pre-change (i.e. when everyone gets 24hr) and seat was assigned (according to profile preference) right from on hold. Not going to pay to check further
