Did you check out the food options that come with the SPG Kids Pass? My 8 year old is the type who would happily bankrupt me eating sashimi all day, would be nice to have a prix fixe option for him so long as its not crap like chicken tenders and macaroni.
I didn’t look into the kids pass, I’m sorry to say. Though they did have “kids” menus and “not a kid anymore” menus everywhere— the latter was recommended for kids 9-12 I think. We thought that between the two menus, the selections were pretty varied. The quesadilla is laughable, however, to anyone who’s seen one in their lifetime. It looks like a cannoli filled with peppers. They let our two year old son order from both menus free of charge, and with a little coaxing, he made it through most that was on offer, with a clear preference by the end for pizza, pb&j, and the burger. I assume the kids pass would let you order from both menus, and to me, there wasn’t a clear portion difference between the two.

As for sashimi, you can order as much as you like at breakfast for free. I had tuna each morning I was there.
